Do they have bad conditions and almost zero labour protections? How'd you guess? We also discuss the fate of a Los Angeles jam restaurant called Squirrel, which tried its hand at a self-run dark kitchen that involve inch upon inch of mould. As we learn in this episode, the only thing that made it illegal was that they didn't have a VC-funded startup handling all of the unethical practices for them.
